This quick and easy Cream of Celery Soup combines onions, celery, and garlic in a creamy base seasoned with plenty of fresh herbs. It has a nice rich consistency without the addition of flour. Enjoy this delicious soup with fresh homemade croutons, cheese garlic bread, or a simple garden salad.
Ingredients:
1 tablespoon olive oil
½ cup sweet onion, diced
½ cup chopped fresh chives
8 – 10 celery stalks (organic preferred), cleaned and roughly chopped
1 clove garlic, minced
4 cups chicken or vegetable broth (Imagine Organic Vegetarian No-Chicken Broth is a great option)
1 teaspoon fresh dill
1 teaspoon fresh thyme
1 teaspoon fresh parsley
1 teaspoon kosher salt
½ teaspoon cracked black pepper
½ cup heavy cream
Creme Fraiche or sour cream (optional)
Directions
Add in the chicken broth, dill, thyme and parsley. Season with salt and pepper. Allow the soup to simmer on medium-low for about 20-25 minutes until the celery is soft.
Carefully pour hot soup into a blender, cover and place a towel over the top and blend until the soup is a smooth puree. Return the celery puree to the pot and stir in the heavy cream. Reheat, adjust seasoning and serve immediately with a dollop of Creme Fraiche or sour cream.
